Game Plan for Entertaining & Random Acts of Kindness

Happy Tuesday all.  I did not work out yesterday because I wanted to give my legs a rest.  They are more sore today than they were yesterday.  I brought 30 Day Shred video to work and I plan to do Level 1 and half of Level 2 during my lunch hour.  I want to get those muscles moving.  Yesterday was just an okay day of eating.  I slipped and had a cookie and gold fish.  But dinner was pretty good. Even though I had no points, I needed to eat something. I chopped up a very small onion, a serano pepper, added a few tomatoes from a can of S&W Mexican sliced tomatoes. I then sprayed a pan with olive oil sprayed and cooked until onions were all sweaty.  Then added 1/4 cup of Morningstar soycrubles, 1 egg and 1 egg white and scrambled it all together. I had no wraps so I warmed up a corn tortilla and chowed down.  This mixture will be great in a wrap for a quick breakfast.  I am surprised at how much I enjoyed the soy crumbles. Lots of possibilities.

This morning as I got dressed, I had absolutely nothing to wear. I grabbed a pair of size 12 slack capris my daughter gave me and guess what?  They fit--comfortably.  Just the encouragement I needed to keep me on plan. Never give up.

I have two family events this week that I am going to need a game plan. What I mean is, my neice's husband is coming over to paint my restroom. What a sweet guy.  He would like me to teach my niece how to make chile rojo so Wednesay I will cook them dinner. Because I need to turn this dinner into a cooking lesson, I decided to make shrimp quesadillas with chile rojo. Because quesadillas have cheese, I will need to make an alternative dish such as shrimp tacos, piling on the cabbage and pico de gallo, stering clear from the cheesey quesadillas.

Then on Saturday my sisters and I are hosting a babyshower for another neice. Oh, what to to? We are serving Lasagna, salad and french bread. My daughter Jessica will be making a lasagna using eggplant, spinach, and low fat cheese. Bless her heart. She has her family eating whole wheat pasta, brown rice. Very proud of her.  So she and I have a game plan for the babyshower. Because of my sugar madness, I will do my very best to stay away from cake.  Cooking and entertaining family is a big part of my life. I just need to learn  how to adjust the ingredients, or in this case make a separate dish for myself.  Writing this out certainly helps me in my planning.

I feel totally happy. Life is certainly good.  I know I whine about all the crap I eat, but I am grateful that I have food in my home and family to share it with, whereas some folks are struggling in these tough enconomic times.  Wow, I just thought of a future post.  List of "random acts of kindness" that we can do to brighten up someone's day.  If you can think of something, please share and I'll post a list.

Hi Paula. Sounds like you're stepping up with the food planning for social occasions. Wonderful that your daughter is into healthy alternatives - I'm sure that this will make things much easier.

My daughter makes healthy stuff too. Gotta love those healthy new moms!

Hmm.... I often bake for my husband and kids and then make extra so I can share with an elderly couple down the road.
